Happy New Year!!

Where are we today ?

        Started to be a restful day but, ran into town for stuff. Not once but twice. Forgot half the stuff I was going for so had to go back. Then just after I left the grocery store the second time Suzie calls me on my cell. Go back an get the makings for a caesar salad and your "famous" homemade caesar dressing. So there, same grocery store, same cashier three times all in one morning (getting to know her pretty good haha!).

        Back home for a bite to eat, then get a few things to do, check tires, make the caesar dressing, have my shower, dump our sewage tanks and store the hoses, ready for our departure in the morning. I don't like dealing with the water hoses early morning when it could be real cold.
        Read a bit this afternoon, then customize a frozen pepperoni pizza, lotsa stuff added, the last of our leftover ham, onions, green pepper, mushrooms, tomatoes and extra cheese, our New Year's Eve supper.

        Now can relax a bit more to get ready for the New Year's Dance at the club house. Hey it's happening right here about 100 yards away with a live band. Sounds like a good time and most likely a late night. Certainly later than usual, hope we can stay awake!
        Heading out soon and will not be updating anymore pictures on today's posting, that last one for 2012. Maybe a pic or two tomorrow.

        Its been a another great year of living the lifestyle of our dreams. And we would like to thank everyone who stopped by to give us a read, and especially those who take the time to comment. Love the comments and your views.

Caesar Salad Dressing

Caesar Salad Dressing

This be the secret recipe I used to make the Caesar dressing for 10 years in my Restaurant, now closed 13 years ago so I am willing to share it.

You can also 1/2 the recipe for smaller batches.
If you like can add anchovies or anchovy paste.

6 Cloves garlic finely chopped in food processor
1/2 tsp salt
1/4 cup white vinegar
2 whole eggs
1 tsp Dijon mustard

Slowly drip in with food processor running\
2cups vegetable oil

Add:
Juice of 1 lemon
1/2 tsp white pepper
8 tbsp Parmesan cheese

Will keep up top three weeks in the fridge, if it lasts that long.

Sunday, a Day of Rest...

Where are we today ?

        Another cold night but we are comfy, great for sleeping. Lotsa blankets and a hat on my head so snuggly warm !!
        This morning up early waiting for the sunrise and warmer weather. Walkabouts, coffees and computing , the usual stuff, all is good.
        Make up some ham salad for lunch time sandwiches, (using up our ham in many ways) left over beans, then time to relax in the sunshine outside and read for a while. Gotta do it while we can. Cold nights but warm in the day time sun.

         As things cool off time to head inside about 4:30, I whipped up a few corn meal muffins, and a tasty ham and corn casserole for supper. Another tasty dish from our leftover ham.

        Not real exciting but was perfect for us, so nice to take it easy when we can. Get lotsa walkabouts the resort, chat with people and don't need to be out and about everyday. After all this is our house.

Colder, and sunny, perfect day for a large pot of ham and potato soup

Where are we today ?
        Wow we had heavy rain last night for a few hours, wind and some thunder, but no tornadoes. Power outage for a while and lost our satellite tv for a bit. No problem just turned our inverter, switch to tv antenna and we good to go. Of course this only happens 5 minutes after we turn on the tv about 8 o'clock at night.
        But had a good sleep listening to the very heavy rain on our roof, kinda lulls us to sleep. This morning was cold again about 27f (-3c) but sunshine and not too windy, sure felt like fall weather. Great day to make a pot of soup.

         A quick trip to town for a few things and back home to work on our left over ham from the other day. Started with ham and eggs for lunch, a treat for us, then carved up the rest, made a nice big pot of ham and potato soup perfect for a cool day. Even got a chance to read for bit while it simmered away.

         After sampling it we decided that we could have nice hearty supper of the soup and a grilled cheese sandwich, sure hit the spot. (somebody has to eat it). Oh and a couple of my homemade shortbread cookies for desert. We have a bit more ham left, a few sandwiches and a casserole should do it tomorrow.

        Not summer weather but sunshine, no snow and almost 55f (13c) in the sun. Nice for a few walkabouts at least.
        Now before we know its time to relax, compute and read a bit more, turn on the tube for a few minutes then hit the sack. Nothing too exciting but hey, we had a busy day yesterday, can take it easy today. And that is something we do enjoy.

Naval Aviation Museum, Pensacola Florida

Where are we today ?
        Today's weather is supposed to be overcast, maybe some rain so we planned to head off to Pensacola Florida about 40 minutes away and check out the National Naval Aviation Museum . We had heard about this from Sparky of Where's Eldo and thought we just need to check it out.  
        Well it was absolutely amazing! Free parking and free admission, we thought sounds like a good deal, check it out for an hour or two. (Boy were we wrong!) We arrived about 10 am and we re amazed at the size of this place. Huge parking lot, pretty full and as we entered the 1st building we were just overwhelmed with what we saw. This place is massive!

         First we get a map and plan a strategy, walked about looking at early aircraft, and displays. the Blue Angels, WWII aircraft and more displays. Videos at various places to watch and so much interesting history here is amazing.
         Real airplanes and helicopters hanging from the ceiling everywhere, displays, mockups, models so much to see and take in! Took so many pictures and have only posted a few (too many) here. And they don't really do justice to what we saw.
         Stopped and watched a video of  the Treasures of lake Michigan during world war II where training of pilots on the lake to land and take off from small fresh water aircraft carriers. A great little known piece of American History.

         Now here for two hours and it's noon, we stopped at the Cubi Cafe and bar for a bite to eat. We had not planned this but had barely began to explore this place. So a quick bite to eat (reasonable prices) and then carried on.

       From here we headed to the upper level with so much more to see and way too many videos to watch.
         Old setups of theatres, homes, kitchens, main streets, stores and army camps were very interesting.

        Then over to hanger One to view more displays.

        Then after walking for hours time to rest a bit and view a movie at the IMAX Theatre. The 2 o'clock show that we choose was The Imax film "Rescue"  all about the EarthQuake in Haiti in 2010 and rescue operations. Now this we had to pay for  $8.25 each but very worthwhile and so glad we did it.
        Hey now it was 3 o'clock and thinking maybe time to head back home. We need to come back another time, and spend a day or two again, its free admission and we did not do the lighthouse tour or the free narrated tour of the boneyard either.
        Stopped by a pharmacy for some cough medicine then home to relax a bit and whip up an easy supper tonight. Left overs are wonderful. Ham, scalloped potatoes, veggies, and baked beans, yep we got it made after a busy fun day.

        Had a great day exploring, enjoyed a bunch of aviation history and did a lot of walking on a dull overcast day, perfect. Almost too much fun, but then can you ever have too much fun?

Sunshine warmer and no wind!!

Where are we today ?
        Cold again overnight but the sunshine sure warms things up here. And we had a wonderful bright sunny day, no clouds , gotta love it! We had a plan to go sightseeing but choose to hang out here and read while we can (love to read outside in the sun!). 
         The resort is getting busier every day, almost a steady stream or rv's coming in and setting up. Look at this rig below, with a full sized trailer and inside a full sized Jeep and golf cart and they are from Alaska! Or at least his plates say so anyway.

        A quick trip to the corner store takes me past the Styx River Shouting center next to the resort. We can hear the guns shooting all day long and when we see the line of vehicles parked there know why.
        Being Canadians we are not used to that at home, but here, it is what it is.

        The afternoon sunshine and reading outside is what we really enjoy. Then mid afternoon fired up our oven and popped in this wonderful 6 lb bone in ham we picked up on sale ($7.16), made some scalloped potatoes and added to the oven as well. Heated up some peas and carrots and boy we have a very tasty supper. Now we have lots more leftovers. Ham sandwichs, ham salad, ham casseroles, ham and eggs, etc... we will get a lot of mileage from that ham for sure.

        Thats it for another great day, but we have been in this area for quite a while, and only because of our trip to Ontario and as part on our membership camping three weeks of no overnight camping fees. Lets just take it easy and relax over Christmas and New Years and get over our colds, (which are clearing up nicely by the way).
        We had a day trip planned for today but the weather was too nice to leave so if the spirit moves us will try again tomorrow.
         Thanks for dropping by again and the way it looks right now Jan. 1st we will hit the road travelling a bit more west to a new destination.
