Where are we today ?
Another exciting day here in Plattsville, overcast, cool and drizzly off and on just like it has been most of the week. The good news is there is a slight possibility we could have some sunshine next week for a couple days.Just hanging out, a few walkabouts when its not raining, drop Suzie off at her Mom and Dads so she could accompany them to a doctors appointment. Her Mom had baked a nice dutch apple pie with spelt flour that we just had to sample, yep very tasty.

Suzie just got home and they are waiting for her |
she only has two hands to pet three dogs |
Normally boiled for a couple hours or 8 hours in a slow cooker but can be done quite quickly in our pressure cooker with about 1 and 1/2 cups of water. I just rinsed it good a couple times to eliminate some of the salt then 20 Minutes under pressure, quick cool, add potatoes and carrots for about 12 more minutes under pressure. Done. Everything turned out excellent in less than an hour and all cooked in one pot. Lotsa leftovers great for sandwiches too.

oh so tender and tasty |
Oh by the way Suzie has pretty well completely recovered from tooth extraction, no issues at all.
Thanks for taking a peek again and hope y'all come back, eh!

You always find such nice places to stay. Enjoy your time visiting all your family and friends this summer. It's really nice be around "home".
ReplyDeleteIt's nice but can't wait to move around a bit and do some more of that.
DeleteI'll send some of our sunshine up your way as long as the heat goes with it. Going to be close to 100 this week-end. The pie really looks delicious.
ReplyDeleteDeal, you send us some sunshine and heat, I will see about getting you a piece of that pie.
DeleteWe finally had the sun peak through a few times today. Rumor has it that it is heading East.
ReplyDeleteBe Safe and Enjoy!
It's about time.
Thats good maybe we get a bit of yours.
DeleteI haven't seen one of those pork butts here in the states in decades. Makes my mouth water.
ReplyDeleteIts been while for us too so moist and tasty.
DeleteI love to get up each retirement morning and ask "what do I want to do today" rather having the pre-retirement workdays pretty well planned for me and using the weekends for the must do stuff.
ReplyDeleteYes it sure is wonderful, best job we ever had!
DeleteThose dogs look beautiful, no wonder Suzie loves them. I like to make pea soup with those pork cottage rolls.

I love pea soup too, not so much Suzie, but will make it another time.
DeleteNIce to be able to just roll with whatever comes your way.
ReplyDeleteSure is we can manage changes quite well.
DeleteTo heck with the pork butts, just give me some of that home baked Dutch Apple Pie....yum!
ReplyDeleteRick I put that pie in there just for you!
DeleteIt was really good too.
So true George, retirement is a pretty darned good job....!
