Where are we today ?
This morning kinda overcast and it stayed that way all day. Morning coffees, computing and walkabouts just enjoying this wonderful winter weather here in the Louisiana swamps. Keep looking for some resident alligators that are said to frequent this area but have yet to see any in the wild. Guess its really not hot enough for them yet.
A quick trip to Acquistapaces's Supermarket in Covington for a couple items. Love this store as they have an amazing meat section, excellent produce and one of the largest selections of alcohol and wine I have seen anywhere. With hundreds of different beers to choose from too. In particular I was here to purchase some pigtails for supper, special for me. I will make the with pork ribs (for Suzie) tonight's supper.
Back home a couple more walkabouts, a bite to eat for lunch and chat with some new neighbors from Ontario. Their home base less than an hour from ours. They just went full time this past fall and are enjoying it. So nice to run into people from our local areas back home, small world.
Now we headed out to Mandeville to the Book Rack looking for some newer books and exchange some ones we have read. Got a pretty good deal there, made a couple stops on the way then back home to begin supper.

My plan today was do the ribs/pigtails and the whole meal on out Weber. But a little cool, windy and raining so plan "B" is throw supper in the oven. In the oven should have started sooner. I am used to cooking more on the grill. So after an hour things aren't cooking as fast as I like. So plan "C" get out my pressure cooker, meat goes in and 20 minutes later, perfect. Into the oven now, with my sauces slathered all over and soon all is good, sticky, gooey, spicy and tasty BBQ'd.

So there, now we have a yummy supper tonight, mashed potatoes, BBQ's ribs and creamed corn for Suzie, BBQ'd pig tails, mashed and sauerkraut for me. We are both happy and cravings taken care of.

I cooked everything up so we can have (leftovers!) we do have enough meat for another meal. So either soon or in the freezer for another feast.
We were so busy today doing nothing, that we had no time to even read our books. Hmmmm, not sure how that happened. Well no problem, tomorrow is another day.

Plan "c" got the job done! Supper looks yummy although I am not sure about the pig tails....I agree with Suzie, I love ribs!
