Where are we today ?
We have had our share of rain and today the forecast was supposed to be sunny and warm. Well the weather guys lied! This morning 5am raining, sun came up, raining. Not hard rain but overcast, light rain and much cooler like 50f (10c).
Gonna clear up by noon, nope did not happen. So did the best we could do, walkabouts the resort, read and research. A trip to Wally World in Hammond for a few groceries, back home and more of the rainy day stuff. Stopped raining so sat out for a while, but no sun so was kinda chilly.
Then suddenly shortly after 4 o'clock we having some sunshine, but guess what them big trees put us in the shade again. No problem we had fun anyway just doin stuff.

But now we can have our own Happy hour and get ready for supper. Found some great pork Ribs on sale ($6.73 for a huge slab) and just had to buy them. Too much for one meal to put half in freezer. Pressure cooker 1/2 the slab for 15 minutes then throw on the Weber where our potatoes in foil are cooking. Slathered on some tasty sticky BBQ sauce until caramelized. Added sauerkraut, cauliflower and carrots, tomato slice and we have a very filling meal, fall off the bone sticky good. The whole meal for two about $6.00, gotta love it.

DeleteSure different then the weather you experienced out west last year, but looked fun seeing all the different sites the area has to offer. That's what keeps your winter RV adventures interesting, always something new. Good looking ribs you cooked up and so fast. Have a Great Thursday!

DeleteLove the pressure cooker steams the ribs under pressure to make them very tender, very fast, without loosing the flavors by boiling them.
