French Canadian Pea Soup
"A traditional dish for Fridays (a legacy from Quebec's religious past.)"
We were chatting with Mike and Trish yesterday and she reminded me of this soup I made last year at his time, great for a cooler fall day. So I picked a small bone in Ham, a lb of quick cook yellow peas, removed the bone and whipped up a pot of this tasty soup I remember from my childhood lunches. Accompanied by a ham sandwich is "Awesome!"
Ingredients
1 lb split dried peas
8 cups water
1 ham bone
1 large onions, chopped
1/2 cup celery, chopped finely
1/4 cup carrots, grated or chopped finely 1 teaspoon dried savory
Directions
1. Wash and sort peas, place in a large pot
2. Add ham bone, onion, celery, carrots, savory and 1 tsp salt.
3. Bring to a boil, reduce heat and simmer intil peas are very tender abou 1 hour or more.
4. Remove ham bone, remove meat, chop it up and return meat to soup.
5. Season to tase with salt and pepper.

That sounds real yummy . Simple recipes. I LOVE simple. Going to try this.
