Our day starts early as usual and very pleasant this morning 61f outside at 5 am now this is wonderful. Accompanied by another wonderful desert sunrise. Nothing quite like these desert sunrises here compared to everywhere we have been in the last 10 plus years.Then as the sun rises in the east, I turned around a got to enjoy a very nice rainbow to the west. looks like some rain coming over the mountains behind us.
Heading into town about 8 am (Arizona time, 7 am here in California) the weather does not look great but only a few minor sprinkles of rain and no wind.
Home to putter around for a while, whipped up lunch the I took a nice desert hike east of us for a couple miles.

For supper tonight decided on some homemade spaghetti sauce (recipe click HERE or my recipe blog top right sidebar) with brown rice pasta, (would prefer spaghetti squash but way to expensive) some garlic Nann bread and a salad on the side. Mainly because of the predicted high winds that did not really happen. Wind warning in this area up to 50 mph ! But nope we were good here maybe 15 mph. Managed to enjoy some wonderful outside sun and shade, shelter from the breeze, finished a book and started another.
After our happy hour then inside to whip up the spaghetti, sauce and salad.

DeleteOk stupid question....how do you prepare the spaghetti squash when you use it for your spaghetti sauce? I've never tried that before and would love to. Thanks!
ReplyDeletePretty simple, cut squash in 1/2 scoop out the seeds, in microwave skin side up about 10 minutes or so until done, scoop out "spaghetti" and top with you sauce, so yummy and no carbs.
