Where are we today ?

The rain finally let up again and we enjoyed wonderful sleep again. Up nice and early get some computing done and pot of coffee made for our good friends stopping by shortly after 7 am on their way to Florida. For a coffee and I had just made fresh pot special for them.These friends be Gerry, Melinda and of course Tucker. As usual Tucker is excited to see us and right away had to jump right up and give Suzie a kiss.

I had started early this morning boiling up the bones from last nights chicken to make tasty broth for soup.
After a few hours, I strained the broth and added the veggies and spices and lt simmered for another 2 hours. Now we have a very hearty soup for lunch today and a few more.

We have to Pecan cracker that makes this a pretty easy job. With Suzie's help we were done on no time, plus enjoying this wonderful sunny day.

ReplyDeleteTucker does get excited when he sees Suzie he was in such a hurry to get in the coach he stumbled going up the steps.Have been nibbling at the pecans, Think I will freeze them for now and make some pecan tarts in the future

DeleteJust catching up reading your blog. Really enjoyed the trip through memory lane with all the 1950s memorabila. Looked for the old Lance Cracker jars, but I knew they had to be in there somewhere.
ReplyDeleteYou are piling up some pecans; thought I would give you my mother-in-law's recipe for pecan pie. She was a great southern cook.
One pie crust
One cup of sugar
Two tablespoons of all-purpose flour
Three eggs (preferably room temperature)
One stick of oleo margarine (preferably Blue Bonnet)
One cup of WHITE Karo syrup
One cup of chopped pecans
One teaspoon of vanilla
Mix sugar, flour, and oleo margarine (let margarine soften a little before mixing).
Beat eggs.
Add eggs to mixture and mix again.
Add syrup, vanilla, and chopped pecans and mix again.
Pour mixture into one large pie crust or three small Pet Ritz pie crusts.
Top mixture with whole pecan halves.
Preheat oven to 350 degrees.
On center rack, bake pies for 10 minutes.
Then, lower oven temperature to 325 degrees.
Continue baking for 50 minutes.
Then, after removing pies from oven, let them cool.
Good with whipped cream or vanilla ice cream.

Your soup looks good. I have chicken bones and some chicken in the freezer leftover for a soup once we settle a bit more. :)
It was nice that they had time to stop by for a coffee. Love the fresh pecans have had that cracker since 2006 and works wonderfully. Always enjoy a homemade soup.

ReplyDeleteIt was nice to see these guys again especially Tucker. Lotsa pecans here but n9t as many as past years. Not sure yet what I will make yet so probably freeze them for now.
