This morning is overcast and a bit cooler, but still not too bad. Not much happening today, which is just fine, because we do enjoy quiet relaxing days. Taking a few walkabouts in the resort and chatting with some neighbours and a quick trip to the grocery store, life is good. We both researched maps and planned some future adventures for this summer and our winter travels south. So much to see and do, the possibilities are endless.
There always seems to be something to do if we care to do it, looks like we have darts tonight at the clubhouse so we want to make sure that supper is done and we can be there for 6:30 pm. I found this extremely simple and very tasty recipe and put it together just as the sun came out and things warmed up around 5:00 pm. I served it with a rice pilaf and tossed salad.
Crunchy Onion Chicken
1 FRENCH'S® French Fried Onions 79 g
2 tbspflour 30 mL
3 small boneless skinless chicken breast halves3
1 egg, beaten 1
Directions:
CRUSH French Fried Onions with flour in plastic bag.
DIP chicken into egg. Coat in onion crumbs. Press firmly to adhere.
BAKE at 400°F (200°C) for 20 min. until no longer pink in center.
Then its time for darts. There was 20 players in all so we paired up and enjoyed the challenge and fun involved with this fun game. We didn't win any money but did have fun for 3 grueling hours arriving home about 9:30 pm after bedtime!!! With still enough energy to watch tv for a while.
