Another wonderful day that just flew on by and a Spatchcock chicken for supper.

     Another great desert day is happening here. At 7 am I headed out for my first walkabout as the sun begins to rise bringing brightness and warmth to the desert floor. Got just about 2.5 miles in and back home by 8am. Morning sunshine on our patio now with our new location, love it !

       A bit later a quick trip in to town to fill our 5 gallon RO  water jug and a few items from the Roadrunner market.
Ro water only $1.00 for 5 gallons
     Just puttering around and a couple more walkabouts then a light tasty lunch. Right after that I did a drive about over to Tyson Wash LTVA another great area to camp that I have been thinking about and we will get to at some point.
     Now to enjoy a wonderful sunny warm day reading in the shade , actually half shade and half sun, only 67 f today but too hot in the sun and too cool in the shade, this works for us.

         Now for supper we are cooking a 5 lb chicken that I picked up on sale the other day .77 cents a lb A 5 lb chicken $3.90 can;t turn that down. And I want to do it on our Weber Q and try a new process.
      Spatchcock a Chicken (flatten it) So after some research I went ahead and this is how I did it. You can click HERE or my recipe blog top right sidebar.

        This was ready to go and will cook quickly. No need to cook it yet, priorities here. Happy Hour at 3 pm. Good friends Len and Brenda joined us today, and they do follow all or our blogs including Tom and Debs. Glad that they could join us.

     We flapped our gums enjoyed sharing stories and had a few laughs as well. Always a fun time to socialize with fellow tv'er's.

         About 4:40 time for me to preheat our weber Q make our salad  the put the chicken on at 4:50 pm 20 minutes turn it over for another 20 minutes and soon done in 1/2 the time. I cooked the backbone as well for our soup stock.

         Chicken about done and we enjoyed another desert sunset, just because we are here and we can.

  2. Every time I see chicken at 77¢/lb or even 99¢/lb, I remember how much it cost to raise chickens on our farm. Can't compete with that price.

  6. What a beautiful day! Great looking Happy Hour group! Awesome looking chicken and I can see how that would cook quicker that way and it looks so yummy! Certainly a great price for chicken!

    1. This kite is in the shape of a big bird, they also have one that looks like an airplane and a few more.

  9. The first time I saw a chicken cooked that way was on a Bobby Flay show, "Boy meets Grill" I must try that someday. Another perfect day in the sunshine!

    1. I have heard of them and wanted to try it out, sure cooks a lot quicker and comes out perfect !
