Visit both Mom's and an excellent Cauliflower pizza for supper.

Where are we today ?
Early this morning I head on down for a nice country drive to Plattsville. Snowy cold and very peace full, great way to clear my mind and enjoy the winter scenery. Chat with the local guys for a bit, keep up with the gossip and solve some more world problems.
A couple local guys stop in for a coffee and get warmed up, both doing snow removal, Freddie's smaller John Deere (green) and  Shorty's commercial yellow John Deere. They do keep very busy here in the winter.
looks like a snow plow standoff
Back home we had a bite for lunch then off to Kitchener. Suzie drop her Dad at the hospital to visit her mom and I picked her up and visit my Ma. First time since we have been back, about a month or so ago. She has been in the hospital, rehab centre and back to her retirement home since ,November, operations, in Kitchener, rehab in Guelph and a few lockdowns due to flue viruses. Finally all is clear and we did go have a very nice visit with her this afternoon. Then took Suzie back to pick up her Dad and I  made it home to make a favorite of PIZZA! Yep but with a cauliflower crust. The recipe is right HERE.
riced cauliflower
ready to pre bake the crust
now to dress it up
whatever you like
Got it loaded. Turkey keilbossa,  pizza sauce, low fat mozzarella, fresh mushrooms, red peppers, red onions, grape tomatoes chopped up, then on my half Jalapeno peppers and black olives.
Sure did the trick and yes we ate the whole thing! That was our whole meal nothing else, we don't do desert.
ready to eat
yep was wonderful and very light too
Another fun, busy day and very rewarding as well.
Hope you had a good one too and thanks for taking the time to stop on by !
Check out the interactive map below to see where we have been this past Winter.

    1. I had my own Pizza restaurant for years and think it would be a great addition and of course wheat and gluten free.

    1. Teresa I think you would be surprised at how good it is I was sceptical at first too, and after making thousands of pizzas in my own restaurant for 10 years was impressed.

  6. My Aunt Happy's retirement living place got shut down because of colds and flu this winter. But we got to visit her yesterday and everybody seems to have recovered. Glad you were able to solve some of the world's problems.

  7. What an awesome idea for your pizza, going to try this one for sure. Glad you got to finally see your Mom. Hopefully it's not to long before you can enjoy your outdoor walkabouts again, we are watching your spring count down clock and hoping to see some warm weather come your way.

  8. I have seen the recipe before for a cauliflower pizza crust but I have never tried, maybe I will have to one day. I have a great gluten free pizza crust recipe that I use that is easy to make and tastes delicious.
