Breakfast Casserole

Breakfast Casserole


        This a simple casserole to make for breakfast to feed a bunch of people. You could feed 10-12 light eaters  if you add other items like fruit, veggies and toast or buns on the side. But six of us polished it off no problem.

Here's is how I made it but you can change the ingredients to whatever you have.

I had cooked up 1 lb of farmers's sausage the day before and 4 or 5 baked potatoes while I had the BBQ going.  You can use breakfast sausage or bacon, or you can use frozen hash brown potatoes (thawed).

Preheat over to 350f
In a greased (I sprayed with pam with olive oil) 9 x 13 pan I put chopped up sausage on the bottom.
Coarsely shredded the baked potatoes over the meat 4 cups or so.
Then I sautéed a chopped onion and green pepper and layered over the potatoes.
6 or 8 eggs slightly beaten and pour over everything.
Spice as you like, maybe a bit of salt and pepper our whatever..
Now sprinkled about two cups of shredded cheddar cheese over the top and pop in the oven for 35-40 minutes until fim and bubbly.
Let stand 5-10 minutes to firm up then serve.


If you want to add a cup or so of cottage cheese, and swiss cheese you can, would make it more substantial and cheesey, but I did not have any on hand.

For me recipes are for ideas and I usually improvise with what I have on hand, this is a hard one to mess up experiment and Enjoy!
