clic on a pic to enlarge it
Just another day here in paradise no complaints here. After coffees and a nice walkabout came home to see these amazing quails and birds outside our bedroom window having a feast. From the seed our neighbour spread behind our site yesterday.
this pic was taken from the internet of a
Gamble's Quail,, they are too cool
this pic outside our bedroom window
quails the large birds
Another quick drive into town and stopped to talk a picture off the Elephant  island in the middle of the lake here. Apparently it looks like an Elephant laying on it's side a volcanic core from a long time ago.
this be the Elephant
Then another drive around looking at the scenery here.
nice trails and roads around the park
and the beach
another walkabout I spotted a Roadrunner ,
cruising around, love watching these guys
Down the road to check out the dam after lunch.
lake is to low to reach the dam
Touring done for the day and can now enjoy our reading out side in the sun and  shade. up to 72 F (22c) but very hot in the sun. So once again sun and shade to be comfortable. Boy this a tough life !?
another great author and page turner
On of my walkabouts chatted with this fellow down the road, notice his mini bus?  They pull a 28?ft trailer behind and have 7 young children ( I think the oldest is maybe 12?) Just went full-time this fall, from Alberta Canada and they are being home schooled. Wow what an adventure they will have. He was getting ready for them to go for a swim in the lake! They were there yesterday and loved it, way too cold for us old folks.
the mini bus and the camper works for them
Soon time to whip up supper , first I put together our favourite four been salad to add to our lettuce salad. Prepped some baby Back ribs for our Weber Q. Preheat the Q .If you want the recipe check it out here , Pork ribs on the Q clic HERE or recipe blog top right side bar.=
love this to add to our salad, just add some onion, olive oil,
honey, vinegar, salt and pepper
tasty and healthy
another perfect cloudless day
ribs in the foil with sauerkraut
sun is setting just about the time the ribs
need to go on the grill mat
5:10 pm perfect timing
grill mat to caramelize the ribs and
keep the grill clean
fall off the nice sticky tasty ribs
what great way to end another
perfect day
Again still outside reading and posting this blog almost 7:30pm in the low 60's f soon time to head inside and call it a night.
Thanks once again for checking us out and hope you had an amazing day wherever you are.

  1. Evening George/Suzie, that place sure looks fantastic... Brad would love those roads in our new Jeep. We saw a Roadrunner today, little bugger was running... man are they quick. Quite the adventure that family will have no doubt. I'm excited for them, wish I'd thought of it when mine were young.

  3. I only cook my ribs now with the sauerkraut. What a difference it makes. Have told a few people about the method. Just wondering how you came across this or any history about it? Thanks in advance.

    1. The sauerkraut makes a huge difference. I used to boil them years ago to make them tender, but found they were too bland, and would make sauerkraut on the side, So thought I would try cooking the ribs and kraut together and as you know it does make a huge difference. Then on to the grill with BBQ sauce or in the oven to glaze them.

I enjoy watching the quails and roadrunners. Your ribs as usual look awesome, I never seem to have sauerkraut on hand, keep forgetting it on the list!

  9. We left Elephant Butte the day you arrived. Wish we were still there, I could go for some ribs in 'kraut!
From the pictures, I believe you went to the 'dirt dam' which just kind of fills in a low spot. The real dam is concrete and 100 years old (last year.) You go towards T or C, but turn left at the "T", towards Engle, and follow the signs to the dam site. It is a very interesting area, with some old CCC works and great views. We always enjoy following your blog.

  11. Incredible undertaking to be full time with 7 children...not sure I would have the patience for that. But then not sure how patient in a sticks and brick with 7 children either. I am beginning to think you carry that roadrunner with you since you are always spotting them...Just kidding.

  12. Not sure about 7 children it sure take a special type off couple for that and they are a great couple too. Not The roadrunners all over the desert as you should know.
