Where are we today ?
This morning was kinda cool, overcast and windy. But we knew that so I put a nice corned beef brisket we picked up the other day, half price only $4:00 and we love corned beef. Head of cabbage for .89 cents, 2 taters and some carrots, into our slow cooker for the day.
Because of the cool weather this morning we had planned to checkout the Windstar Casino across the Interstate from here about 9 am.

HERE Now this place is HUGE (1/2 million square feet!) We walked the whole place end to end was 1.5 miles ! With over 7.400 gaming machines plus 1,500 rooms, 16 restaurants, 150 campsites and all the facilities you can think of and, or can afford. Plus 8 areas with different cities and countries to visit. London, Madrid, Rome, Beijing, Paris, Vienna, Cairo and New York. Each area with a different theme and amazing sculptures, fountains etc... Sorry no pictures inside the casino. We got players cards as we usually do but no deal here! Want us to spend $50. dollars each and get $25.00 free slots play! Not gonna happen. We are not gamblers but did play the penny slots for about an hour 5 bucks each. Almost won our money back but as usual made the donation. Not bad for a morning's entertainment.

Ok enough of that over the top place, but we had to check it out. We home for lunch. Smelling the slow cooker doing it's thing, smells wonderful
A nice light lunch, few more walkabouts and even some reading time done outside in the sunshine that finally came out. Out of the wind a bit cooler but was still a wonderful day !

This is my old slow cooker, 10 years in my restaurant every day still works good after more than 28 years.

DeleteThis place is a destination, the restaurants alone were amazing and entertainment complex huge as well with some big names playing.
Easy to believe it's the largest casino and it seems to be in the middle of no where but I guess it's only about an hour from the Dallas area. Your Easter supper looks perfect - you've sure gotten your moneys worth from the slow cooker.

DeleteWe had the same Easter dinner cooked in the same ancient Crock Pot! The Golden Acorn Casino offers free boondocking, I pay for the site by playing the dollar slot machine - $1 and 1 pull, lose and that's my donation; win and it is significant enough to be worth cashing in.

DeleteWe don't gamble much just enjoy the slots for a bit on occasion.
One thing boondocking at a casino gives you and that's lots of entertainment. Part of it is just checking something that big out. It sounds huge to me.

DeleteWell, that crockpot owes you nothing! Where do I buy a corned beef like that? Never seen it for sale, except in the deli. Does it come all seasoned or do you have a recipe to share? The casino is enormous.

DeleteHave seen it in the grocery stores everywhere here, around St' Patrick's day.
Already spice and a recipe on the bag to cook it. Or I just did it in the slow cooker, potato, carrots on the bottom corned beef on top cover with water, on low 8-9 hours, last hour I added chopped cabbage, To easy.

DeleteHow'd the brisket compare to the one you made in the pressure cooker? Or the smoked one I made? I'm headed to Fox's in Parker, AZ to spend a couple days. I'm definitely checking out their floating bar on the Colorado River. Safe travels.
ReplyDeleteAll the brisket was good and very tasty, Slow cooker did a great job similar to the pressure cooker, just takes electricity and a long time. But we have the time.
