Used to work all week waiting for Friday, but now every weekday is friday and then we have Saturday and Sunday, love retirement !

Where are we today ?
Another exciting day here in Plattsville, overcast, cool and drizzly off and on just like it has been most of the week. The good news is there is a slight possibility we could have some sunshine next week for a couple days.
Just hanging out, a few walkabouts when its not raining, drop Suzie off at her Mom and Dads so she could accompany them to a doctors appointment. Her Mom had baked a nice dutch apple pie with spelt flour that we just had to sample, yep very tasty.

Back home to read and compute a bit, and play with the dogs. They are dog sitting another big dog, Jersey for a few days. If you were here last summer he is the one that loves to swim around in the pool, but its not open yet.
Suzie just got home and they are waiting for her
she only has two hands to pet three dogs
Then as the afternoon rolled around a few more walkabouts between raindrops and chat with a few people out doing the same. Then before we know it time to whip up supper, not Weber Q weather again : (   But we have alternatives. Something we haven't had for a while is a nice Sweet Pickled Pork Cottage Roll .

Normally boiled for a couple hours or 8 hours in a slow cooker but can be done quite quickly in our pressure cooker with about 1 and 1/2 cups of water. I just rinsed it good a couple times to eliminate some of the salt then 20 Minutes under pressure, quick cool, add potatoes and carrots for about 12 more minutes under pressure. Done. Everything turned out excellent in less than an hour and all cooked in one pot. Lotsa leftovers great for sandwiches too.

oh so tender and tasty
Thats it for today, time to finish up this posting, relax a bit and call it a night. Rest up for tomorrow, the weather guesser says we have a 20 percent chance of sunshine, and I don't want to miss one ray of it, exciting ? Yes!
Oh by the way Suzie has pretty well completely recovered from tooth extraction, no issues at all.
Thanks for taking a peek again and hope y'all come back, eh!

  1. You always find such nice places to stay. Enjoy your time visiting all your family and friends this summer. It's really nice be around "home".

  2. I'll send some of our sunshine up your way as long as the heat goes with it. Going to be close to 100 this week-end. The pie really looks delicious.

  4. I haven't seen one of those pork butts here in the states in decades. Makes my mouth water.

  5. I love to get up each retirement morning and ask "what do I want to do today" rather having the pre-retirement workdays pretty well planned for me and using the weekends for the must do stuff.

  6. Those dogs look beautiful, no wonder Suzie loves them. I like to make pea soup with those pork cottage rolls.
